One Pan Roasted Veggies

My favorite way to eat cooked veggies is by roasting them.


 It brings out their yummy flavor and for some of them it brings out a sweeter taste which my sweet tooth loves!  Plus it’s simple and quick.


After they’re cleaned and chopped I just pop them in the oven at 350 for 20 minutes and while they cook I prepare the rest of the meal!  IMG_7234

I like to experiment with seasonings but these are simple, I just used salt and pepper and brushed on coconut oil.  Perfect!  Bonus, they were toddler approved (today at least!)



  1. Preheat oven to 350
  2. Clean and chop veggies
  3. Brush with coconut oil
  4. Salt and pepper to taste
  5. Bake at 350 for 20 minutes.  Should be tender and soft to poke with a fork.
