My favorite way to eat cooked veggies is by roasting them.
It brings out their yummy flavor and for some of them it brings out a sweeter taste which my sweet tooth loves! Plus it’s simple and quick.
After they’re cleaned and chopped I just pop them in the oven at 350 for 20 minutes and while they cook I prepare the rest of the meal!
I like to experiment with seasonings but these are simple, I just used salt and pepper and brushed on coconut oil. Perfect! Bonus, they were toddler approved (today at least!)
- Preheat oven to 350
- Clean and chop veggies
- Brush with coconut oil
- Salt and pepper to taste
- Bake at 350 for 20 minutes. Should be tender and soft to poke with a fork.
